Happy hump day!
Time for another What I Ate Wednesday.
Today’s food is some of my eats in no particular order from over the weekend. I had a lot of really good and interesting food over the weekend!
For breakfast on Saturday, I made some pumpkin protein pancakes & had some hot chocolate on the side. It was a chilly morning, so what better way to kick off the day than a warm fall meal?
For the pancakes, I used:
- 1/4 cup pumpkin
- 1/2 a ripe banana, mashed
- 1/2 cup oats
- lots of pumpkin pie spice!
- 1 egg
I fried in a pan on each side for about 3 minutes until golden and had it with maple syrup. Yuummmm.
For dinner on Saturday, my husband went all out. Our friend that lives with us right now is leaving Friday so last weekend was our last chance to hang out with her. He wanted to make a nice meal as a way to celebrate.
We had prime rib that cooked for hours. It made the house smell delicious for so long. It was torturous. We had fresh mashed potatoes and snap peas with fried scallions on top. He also made a red wine au jous that didn’t make it to my plate for this picture but was really good.
For dessert – because when husband goes all out, he really goes all out – we had bananas foster. I’ve never even had this before, but it was super fun to watch him make.
For those of you who may not know, you add rum at the end and catch it on fire to burn off the alcohol. Above is the whole thing on fire! It was pretty fun.
We served it with ice cream and gobbled it right up!
Then we let the celebrating continue into Sunday as we took our friend out to brunch to a favorite spot in town.
We both got the same thing: blueberry pancakes with a berry yogurt parfait with some coffee.
It was so good and not too crazy filling.
It’s hard to believe that my friend is already moving away, but it certain was fun to share the summer and a lot of amazing eats with her!
