Happy Hump Day!
I woke up this morning having a hard time believing it was already Wednesday, but that’s because I took a sick day from work yesterday. I have actually never taken a day off work unplanned or for being sick before!
You know you’re sick when your coffee table looks like this…
I had a mild fever Monday night though and figured I shouldn’t spread my nastiness around work if I was contagious with anything. I’m feeling a lot better today but definitely not 100% yet.
Anyway, onto some eats! I feel like I ate so many good things over New Year’s weekend, so here we go.
For New Year’s Eve, we went out to a newer local restaurant for an early dinner.
We got a shrimp quesadilla as an appetizer (although it was a whole meal!), I got mac n cheese and a salad & hubby got beef bolognaise. The mac n cheese had peas and ham in it, which was kind of weird. Everything else was really good though, especially my Shirley Temple 😉
New Year’s Day, hubby went all out and cooked me a meal and dessert for hours in the kitchen.
He made this dish called Black Noodles, which was a cold rice noodle salad with strips of beef, cilantro, a soy lime sauce, red onions, & homemade crutons. It was very different from we were expecting, but really good!
For dessert, he made this Lemon Souffle Pudding Cake.
Ummm omg, do yourself a favor and make this recipe. It was amazing. So lemony.
The next day, I had the inkling to bake something, so I made some cranberry chocolate chip scones.
The recipe is very similar to my regular chocolate chip scones, but I added cranberries, whole wheat flour, and made them a little fluffier like muffins instead of dry like scones with some more yogurt in them. Not bad, but it wasn’t worth sharing the recipe.
Then the follow night, he also made dinner. There is definitely a trend going on in our household!
We had these giant philly cheese steak sandwiches. Pretty good.
Then the follow night we went out for Chinese. We tried a place we hadn’t been to before, and it was kind of funny. We got this “scallion pie” although I always thought it was a scallion pancake.
I got sweet and sour chicken & we shared some fried rice. However, I was really close to getting the “strange flavored chicken.” Yes, that was actually on the menu. We were cracking up.
