Happy hump day!
I haven’t talked about food much here lately, so I figured another WIAW was in store.
Something I really struggle with lately is lunches for work. I get so tired of packing my lunch sometimes. Food prep is not my favorite when it comes to lunch. I like to prep snacks and dinner and that’s where it stops.
I thought it would be fun to try to come up with some lunches that are healthy that I could blog about and possibly give all you other working ladies some ideas. Or maybe these are the worst lunch ideas ever – I really don’t know!
Toast/English Muffin Pizza
This is one that never gets old for me. I love pizza, but this is a much healthier way to enjoy it.
I know pepperoni isn’t that healthy, but it’s my favorite, so I’d rather indulge in that once in a while and make the rest of the pizza a little healthier by using whole wheat toast and less cheese than never eat pepperoni 🙂
Another variation: on an English muffin.
I typically like this a lot better, but usually inhale English muffins if they are around. I usually have this with veggies and dip as above or with a side salad.
A Non-Lunchmeat/PB&J Sandwich
Sadly, I eat PB&J or ham & cheese a lot. I really like it but it gets old fast. Having an egg salad sandwich has been a favorite of mine that hasn’t gotten old.
Have some fruit and string cheese on the side, this meal has plenty of protein and keeps me full.
Some Good Ole Warm Soup
Soup is awesome at work to me because it’s basically a meal in one package and it’s hot. My workplace is freezing all the time, so soup in the middle of the day is a nice treat.
Chicken Tortilla Soup
French Onion Soup
You can’t tell, but there is a TON of swiss/gruyere in the soup all melted. And I dipped the bread in it to make it a little more filling.
Chicken Noodle Soup
Can’t go wrong here.
Side note: I know some of these look like small lunches, but I usually have breakfast, a mid morning snack, a smaller lunch, an afternoon snack or sometimes two, and then dinner. Being pregnant too, I find that I can’t eat very big meals these days. I get full quickly!
I want to eat healthy, but I am not a big salad person. In fact, most the time I buy salad, it goes bad before I can even think about eating it. I know these are not the most original lunches or anything new, but it’s what I’ve been eating and it keeps me happy and satisfied!
