Happy Wednesday 🙂
I haven’t been up to much this week as you probably guessed. When I don’t have a lot going on, I sometimes feel like I don’t have any blog topics.
One thing I do do every day though is eat, so here’s around round of What I Ate Wednesday.
This is what I ate yesterday.
After hubby went to work, I made a simple breakfast of Kashi Blueberry Waffles with butter & real maple syrup (only way to go, people) and strawberries & bananas.
No coffee either, as that is not good for recovering from a UTI. Sadness. So I opted for a giant water instead.
They gave me this water bottle at the hospital on Sunday. I have to say, I’m actually a fan. My goal was to drink three of these yesterday and I made it to about two and a half.
Mid Morning Snack
I got a little hungry and munched on some coconut chips (from Trader Joe’s) and dark chocolate chips.
Chocolate and coconut = heaven. I really need to make a recipe with these two ingredients soon.
I was originally going to have a chicken salad sandwich on a croissant, but I just wasn’t feeling it. I didn’t even eat until almost one, which is pretty late for me.
I had more minnestrone soup leftovers, just like I had last week.
The recipe makes a ton & it was still just as good.
I made some green tea with honey as I sat down to plan some meals for the week.
However, as soon as I had it, I regretted it because I forgot it had caffeine. Oops. It was delicious though.
Then I had this Kashi snack bar to tide me over until dinner.
I love peanut butter, but I have to say this was dry and I was not a fan.
Hubby got home with groceries (perk of bedrest, for sure!) and I started making tacos.
He made guac, chopped tomato & onions, and sliced some limes.
Tacos were great, but I did slightly burn the hard shells in the oven.
You can’t tell, but the other side of those shells are crispy! Oh well 🙂
Stacie mentioned these new Chobani dessert yogurts a while ago. I’d seen them for a while but hadn’t tried them. I am a huge sucker for raspberry and chocolate, so I got these last week.
Holy yum. I wish these were about five times bigger. So flippin’ good.
Random side note: I actually got called from the doctor about my infection to make sure the antibiotic I am on was compatible. Well, they now think I don’t have a UTI. I am so confused though, as I am still having symptoms and a lot of Braxton Hicks. I really don’t know what is going on now.
I feel okay, but I’m so anxious at the thought that she could be here soon or either not be here soon. Not knowing when she is going to come drives me insane! I know I will look back on this time and probably feel silly for being so worked up about it, but it’s very hard to not focus on it all right now, especially being at home all day. For now, I’m trying not to stress about anything and be content no matter when she decides to come.

- What do you have to have with tacos? I must have sour cream!
- Do you eat leftovers or not? Sometimes I refuse and let things sit forever.
