Good morning, Monday!
I’m really starting to feel re-adjusted after our move. For the couple of weeks after our move, I just felt like I was constantly playing catch up, whether it was unpacking, cleaning, or finally getting to rest. I feel like the adjustment period is over now, as we’ve been totally unpacked for 2 weeks, I’m used to my commute, and my new home actually feels like home 🙂
This weekend was a lot like last weekend – very refreshing, relaxing, but productive at the same time.
It seems like most my good eats are eaten on the weekend. Something about having more time to cook and not feeling so rushed and going out here and there = lots of awesome food. Behold the yums.
Saturday, we had some friends over after we all did our long runs. We were in need of some serious food, but also wanted to try to stay healthy too. It’s so easy for me to want to gorge on bad food after a long run, but that should not be a common habit!
We made orange glazed pork chops, asparagus, and a mushroom risotto from Trader Joe’s. But we decided we could use some more calories, so we hit up a local bakery for some dessert.
I split an eclair and this raspberry cheesecake with my friend. The cheesecake looks huge in this picture, but it was much smaller. Just enough to satisfy my sweet tooth.
On Sunday, hit the Whole Foods Bar with my friend for a quick but mostly healthy lunch: small salad, butternut squash soup (soooo good) and an unpictured ginger ale.
Sunday night, we had fish tacos.
This is actually the firs time I’d ever had fish tacos. All I can say is: WHY did I wait so long? Ahhhmazing.
Sunday night, I also had the chance to do some meal prep for the week.
Soup, leftovers put in tupperware’s for lunches, snack bars, and chocolate chip scones. Would any be interested in the recipe? They’re really good and low-cal!
I’ve had the itch to go shopping for a while now for both home stuff and some more work clothes. I still need some more pieces for the new place and I haven’t updated my work wardrobe since the first time I bought work clothes.
I made a stop at Express because they had a good sale and I had a coupon. I got two pairs of pants and this new top.
I also got a chair for our entryway at – you guessed it – TJ Maxx!
Basically exactly what I had in mind for this space. Don’t you love finding just what you were looking for? Now I just need a rug and the entryway should be complete!
