I haven’t been around much in blog land lately ’cause life has just been crazy-busy. This weekend will actually be the first weekend in a month that I don’t have plans every night! I can say I am honestly looking forward to a home-cooked meal, time with the hubby, and just being home.
Here’s some health related stuff that’s been goin’ on in my neck of the woods these days.
So, this is a little more than a week’s worth of workouts, but here’s what’s been going on for me lately. Working out has personally taken a bit of a backseat for me after my last half marathon. I knew that I wanted to take a break before I finished the race, but I’m really glad to just not be so fitness-oriented right now.
I typically like to create a plan to make sure I work all the parts of my body that I want or run a certain amount of miles, but I’ve just decided to skip that right now. I know I’ll go back to that eventually, but for right now, just winging it has felt great.
Monday – 3 rounds of my Spring Into Shape Circuit Workout; I forgot how hard this one is!
Tuesday – 2 mile run
Thursday – Kick It Cardio circuit; first time & did this and it was a good one!
Friday – rest day (left for camping)
Saturday – 3 hours of hiking in New Hampshire; (maybe about 6 miles up a mountain?)
Sunday – much-needed rest day after the hike; I was so incredibly sore
Tuesday – 3 mile run
I’ve definitely been working out, but running has taken a back seat. It’s actually nice for a change to get to spend more time doing fun circuits than devote it all to running. I definitely want to keep running on a regular basis, but I’ve scaled it back for now to give myself a little break.
A Change in Eats
Lately, my eating has not been the healthiest, and it’s been bothering me because I just don’t feel great. I feel that my eating habits have gotten off track because my husband is super busy in school right now, and when I don’t have to cook a meal for the both of us, it’s really easy to just not cook and eat
half a box of Cheez-Its something not that good or processed for dinner. I just don’t have the motivation to cook for one!
After some Pinterest pursuing, I got some inspiration as to what to eat and found some new recipes. Something I definitely don’t get enough of is veggies, so I decided to actually buy some (wow!). I also had all these little cucumbers that my mother-in-law brought with her when she came to visit. They’re from her own garden in Tennessee 🙂
Just ignore the freshly made rice crispy treats in the background… I promise I’m trying to be healthier 😉
After chopping everything up, because trust me, if it ain’t chopped and ready to go, I’m not eating it – I put everything into Tupperware and voila.

I also got roped into buying one of the samples at Trader Joe’s today. I usually try whatever they are sampling, but most of the time it’s something frozen, which I usually steer clear from. But these were amazing!
Tofu Edamame Nuggets with barbecue sauce.
Love at first bite, people.
And of course, they had a freezer full of the nuggets and a stack of the barbecue sauce right there. How can you not buy it then? Ah, they got me!
