I’ve mentioned before that I am kind of a snack bar-a-holic. I haven’t had any snack bars or sweets since starting my detox. This week, however, I can add anything back in my diet, but I’d like to still stay pretty healthy this week with my half coming up on Sunday and to preserve all the hard work I’ve been doing the past 2 weeks.
But, I’ve really been craving a good old snack bar or dessert. And honestly, these bars fit the bill for both a good snack and dessert. I like ’em sweet!
These are really simple to make and require no baking, which I love. They are a variation of my other snack bar recipe with nuts.
- 1/4 cup honey
- 1/4 cup coconut oil
- 1/2 chunky peanut butter
- 1 1/2 cups quick oats
- 1/4 cup flax seeds (ground or whole)
- 1/4 cup (or more) chocolate chips
- handful of peanut butter chips
- 1 scoop vanilla protein powder
1. Mix the honey, oil, and peanut butter together in a bowl. Microwave for 30 seconds to melt the three together. Stir well until fully mixed.

Oh, and just a tip: try not to eat all of it. I love tasting as I cook, and this is one of those things that I could eat all of before the recipe is made…
2. Mix the dry ingredients together in a bowl, including chips. After the PB mixture has cooled, mix it into the dry ingredients throughly so it coats all the oats.
Warning: don’t mix the PB mixture into the dry ingredients too soon or you’ll melt all the chocolate chips!
Note: I used whole flax seeds. These are quite “flaxy” tasting. If you don’t care for the taste of flax, use wheat germ instead or use less flax seeds. I personally love the nutty texture and flavor, though.
3. Cover a cookie sheet with foil. Lay out the granola mixture onto the foil. Flatten with a spatula and shape how you want.
4. Refrigerate for 20-30 minutes or until solid. Let thaw just a bit (5 minutes) before cutting. Slice into bar sized pieces. Be careful cutting the frozen bars, as you can slip and cut yourself easily.
Tip: using a pizza cutter works well!
5. Package into individual baggies for on the go if you’d like. Store in the fridge or the freezer until eaten. They tend to fall apart at room temperature. And I like them cold anyway 😉
