Although my “just eat July” goal wasn’t as organized and coherent as I would have liked, I think I succeeded in trying 2 new recipes a week. I didn’t really keep count, but I do know that I was experimenting in the kitchen a lot this month.

Jalpeno Popper Grilled Cheese
Cream cheese, mexican cheese, & jalepenos all mixed up and slapped on some buttered bread. Yes. It was amazing.
Banana Bread Pancakes
Like banana bread and super fluffy pancakes combined. Bomb. Recipe coming soon 🙂
Chocolate Chip Cookie Dough Dip
I made this for a girl’s book club last week. It was good, but in a weirdly gross way. Since it was cream cheese based, it still tasted way too “cheesy” to be real cookie dough. I guess just want the real thing. Recipe here.
Parmesan Crusted Tilapia, Onion Rings, & Roasted Cauliflower
We had some friends over for dinner last weekend, so of course we got a little fancy. The hubs made the fish recipe, which looked a little less than appetizing but it was delicious.
I have always wanted to try making my own onion rings and always assumed it would be really hard and turn out like a giant mess. But it wasn’t hard at all.
They key was using the right oil – safflower or grape seed oil. Turn out perfect! A little time consuming, but they were soooo good.
Homemade Chocolate Chip Snack Bars
I have always wanted to start making my own snack bars. Well, yesterday I did. And that may have been a mistake…
Only because they were SO good! I used this recipe as a base for my bars, but didn’t use peanuts & added extra peanut butter.
Quote from my husband about these bars: “Those are not snack bars. Those are dessert bars!” Pretty much! I’m definitely going to start playing around with some variations soon. I can see myself becoming the homemade snack bar queen… watch out!
