Alrighty folks! Anyone remember when I announced my goal for this month? No? Yeah… I don’t either!
To be honest, this month has been crazyyy busy, much more so than I expected. Every weekend has been jam packed with socializing, get togethers, and not a lot of down time. My hubby is also taking night classes right now for four nights a week!
So my whole goal of making 2 new recipes a week? Not the smartest idea when there’s really no one to cook for! When he’s not going to be home for dinner, I really just see no sense in cooking a whole meal for myself. I am a low maintenance eater, and I’m not going to lie – cereal for dinner is not only totally acceptable, but totally perfect to me. 😉
But we have managed to try some new recipes in the last two weeks. Forgive me for not recapping sooner, as I’ll probably forget everything there was. But I’ll try!
I’m not really sure who’s idea it was to make a hot soup in the dead of summer, but this was very tasty and fresh. It kind of reminded me of a minestrone type soup without the noodles.
We tried to make burgers for my hubby’s birthday, and were planning on grilling, but the pool area was closed 🙁
We ended up pan frying them, and they just didn’t turn out that great. I also got ridiculously thick cheese?
Because the hubby made his jalepeno beer a few weeks ago, he needed just one jalepeno. I only went to Trader Joe’s for the week though, and they only sell them in packs. It was cheap, so I figured we’d find a use for the remaining peppers somehow.

The hubby gets all the credit for this one. We ate them with thousand island dressing (random, I know) but it was so good! I seriously cannot wait to make these again!
And because we still had leftover peppers, the hubby also made some poppers filled with cream cheese, cheddar cheese, and I’m sure some other secret ingredients.
I am typically shy when it comes to fish, but I will eat Tilapia. We covered the tilapia with homemade cajun seasoning and grilled it.
Sooooooo good! I usually don’t finish a whole piece of fish, but I devoured this like nobody’s business. Delicious!
I guess we’re not eatin’ too shabby around here!
Let me know if you want the recipe for anything. I honestly don’t have any of the recipes because my husband found them, which means they’re not on Pinterest. And if they’re not on Pinterest, I have no idea where they are then!
Questions for You:
- Yay or nay for jalepenos? I used to not be able to eat them at all, but my husband has definitely gotten me used to the heat. I love them now!
