Good morning & happy Saturday 🙂
Last night, I welcomed home my real Valentine with a delicious crock pot dinner. I made this crock pot Black Bean Enchilada Stack from Julie @ Running in A Skirt. So good!
1. First, I sautéed some peppers and onions before adding in the beans, tomatoes, green chiles, and spices. I didn’t have any taco seasoning, so I improvised with red pepper, chili powder, cumin, and pepper.
2. Then I layered all the ingredients – corn tortillas, bean mixture, and cheese.
3. Cook on low for 3ish hours. The scent was driving me mad! I couldn’t wait to eat it.
4. Enjoy! Although it’s called a stack, mine turned out more like a glob of enchilada.
Of course, I couldn’t keep Mista Beans from the cheesy goodness that was dinner…
He’s a sucker for cheese 😉
This dish was absolutely delicious, super easy, and the hubs said it “tasted like authentic Mexican.” Can’t get better than that! This is definitely a “keeper” for my crock pot recipes.
Good Day Sunshine Update
As it’s now half-way through the month, I realized I should probably address is how I’m doing with my February goal of waking up early & following a night routine (aka, Good Day Sunshine)!
In short, this goal is going very well. Before starting this goal, I was pretty worried about having to wake up at 6 AM every week day. I thought, how am I going to bring myself to physically do this?! I realize now, though, that waking up early isn’t the hard part. I can drag my lazy butt out of bed no problem. Actually getting going in the morning – that’s the hard part!
While I am able to get up early, I still don’t feel as rested as I would like. I am seeing that consistency in going to bed earlier definitely helps me wake up easier. My morning routine usually goes pretty well, but it’s not all that different from what I was doing before besides waking up earlier.
What’s different, though, is my night routine. My night routine has honestly made a huge difference, not just in being able to wake up earlier the next day, but in gaining peace in my life that wasn’t there before.
A little recap of what I do at night includes…
- going tech-free at 8:30 pm (or earlier)
- tidying up and doing any prep for the next day
- making a cup of tea
- washing my face, brushing my teeth, & then heading to bed
- lighting a candle or two, putting on some low lights to set a relaxing mood
- getting in bed to read a devotional, book, or the Bible; write in my journal, and pray
All of these activities are so simple but so relaxing to me. I’ve noticed that I’m starting my night routine before my alarm even goes off reminding me to begin. I really desire to relax before bed now, and when I do, I find I’m drifting off to sleep so peacefully.
Originally, I assumed I would follow this schedule Monday-Friday. In reality, I am following the night routine Monday, Wednesday, Thursday, and Sunday. Not on Tuesday because I have a Bible study that night that lets out late and by the time I get home, I just go to bed. And not on Friday because that’s usually a date night or night out with friends. Saturday is pretty much my “free day” from waking up or going to bed early altogether. While my consistency is actually not what I envisioned before I started this, as long as I am consistent with this schedule on those days, I’m happy.
Right now, I value consistency in trying over consistency in perfection. I’ve realized that demanding perfection from my schedule is useless, especially since my schedule changes every week. I see my efforts bringing me to a much better place in terms of my schedule, so I’m overall pleased.
I haven’t posted much in the workout department lately, but my new workout plan is going great. I honestly think I’ve seen better results and felt better in the last two weeks than I did in all of January.
Because I thrive on schedules, I made this handy dandy calendar for my pinboard of success.
I’m really loving this plan because it offers so much variety: strength training three times a week, running, other cardio, and yoga. My body is loving this routine!
Now I’m off to start today’s workout of some strength & cardio before the hubs and I venture off on our Valentine’s Day date. We’re going to tour some chocolate shops, go shopping, & get some Italian!
