Hey, guys! I have a really tasty and easy recipe to share with you today. This recipe is not mine, though. My lovely friend Carson has let me steal it from her to share with you!
We recently had this dish together with our Bible study group, and it was a big hit! The tangy but sweet curry chicken is was so savory over a bed of warm white rice. The curry is not spicy-hot at all either – just full of flavor and tangy.
All you have to do to make this is whip up some Minute Rice, prep the chicken, let it bake, and then top the rice with the chicken & extra curry sauce for an easy but healthy meal. This was a great meal to serve to our rather big group, too, because the rice and chicken can easily be doubled or tripled to accommodate more servings.
Minute Rice is also a great way to round out a meal and make it complete. I love how the honey curry sauce soaks into the rice in this dish. The rice and chicken complement each other, providing a mouthful of tastiness and a fullness to it that the chicken & rice can’t do by themselves.
We also served the dish with a salad and fresh fruit for a well-balanced, healthy dinner. Dee-lish!
- 1.5 lbs chicken breasts/tenderloins
- ¼ cup butter, melted
- ½ cup honey
- ¼ cup Dijon mustard
- 1 tsp salt
- 2 tsp yellow curry powder
- pinch of cayenne pepper (optional)
Pre-heat oven to 350 degrees. Combine melted butter, mustard, honey, salt and curry in small bowl. Cut chicken into about 1 square inch pieces and place at bottom of a 9 x 13 baking dish. Pour honey curry mixture over the chicken and stir so the chicken is coated well. Cover with foil and bake for 30 min. Uncover, stir chicken, and bake another 15 min or until chicken is done and there is no pink in the center. Serve over white Minute Rice and enjoy!
The total time to make this dish is an hour, start to finish. For a quicker prep time, make the honey curry sauce the night before, cut the chicken up, and cover with the sauce. Cover and place in the fridge until you’re ready to bake it. I love this dish because it uses Minute Rice as a base. By using Minute Rice as a base, you can create a number of great meals.
