I didn’t mention it earlier, but I was having some weird calf/hamstring pain all week. I took my workouts pretty easy all week because of it and did tons of stretching/icing. Yesterday, though, all my leg pain was gone! I’m so happy, especially since I start half-marathon training really soon. I think I just need to stretch my hammy’s more consistently.
Last night I went to bed thinking I could be all ready to go on the 5 mile run I had planned for this morning. But my body is definitely saying no right now. It’s not my leg again. My body has just decided to feel like crap. Another rest day it is…
But, onto happier topics, let’s back up to yesterday’s eats & a smoothie recipe!
I was really excited all week to make this General Tso’s Crock Pot Chicken.
Served over a bed of white rice with some steamed broccoli.
This was soooooo good. It was really easy to make too. The sauce was a teeny spicy, mostly tangy, and thickened up nicely. It tasted like Asian food you get at a restaurant, only healthy for once.
I’ll be adding this to my list of favorite dinners!
Ice Cream, Please
And since yesterday just wasn’t that great of a day for me and it was Friday, I needed some ice cream.
The hubby and I recently discovered this ice cream place a few miles from us. It’s the type of place where you order at a window and there’s just outdoor seating. Nothing fancy, but it’s amazing and cheap.
I got a vanilla soft serve dipped in peanut butter. Their portions are hilariously huge, though. This is the kiddie size cone.
You see how tiny the actual cone is? I don’t even know how it held all the ice cream!
The hubby asked for one scoop of moose tracks and got two huge scoops. All for $5! We’re not complainin’!
For the crock pot chicken, I had to get some pineapple juice. However, this was the only pineapple juice I could find: a six-pack case. How convenient…
In my attempt to get rid of the juice, I asked the hubs if he would drink some in his lunches throughout the week. Quick answer: NO. Alrighty then… But I don’t blame him. Anything out of a tin can is pretty crappy.
What to do with all this juice? Make a smoothie of course! I had this little concoction for breakfast yesterday and it did not disappoint.
Berry Sunrise Smoothie
1/2 cup blueberries
1 banana, frozen
1/2 6. oz container plain Greek yogurt
1/4 cup oats
1/2 cup pineapple juice
Directions: Mix all ingredients in blender. Blend until smoothie. Enjoy!
This smoothie was so fruity and sweet, but hearty and filling at the same time.
Nice and refreshing, just in time for this great weather.
