Good afternoon! I hope ya’ll are having a happy Sunday today. I am because I’m personally celebrating a great week of Back to Healthy January! 🙂 Remember last week how I was talking about how my diet was not where I wanted it to be, mostly because of the leftover Christmas goodies lying around? Well, I took care of that and it made all the difference in my diet this week. I would say “Back to Healthy” has definitely been accomplished!
Again, I had another week of good workouts. My running is still dependent on the weather lately, which always proves to be challenging. My Monday run was perfect, whereas my Friday run was unbearably cold and windy. It’s a hit or miss. But I’m doing it, and that’s all that matters!
- Mon: 3 mile run; awesome run to start my week
- Tue: Tone It Up Strength Circuit
- Wed: PBFinger’s 30 Min. Incline Walk; this was kick-butt hard even it was a walk
- Thur: Tone It Up Strength Circuit
- Fri: 3 mile run; not-so-awesome-freeze-my-butt-off run
- Sat: Tone It Up Strength Circuit & 30 min. elliptical
- Sun: off
While working out always makes me feel good, what honestly makes me feel even better is when I eat right. This week was sooooo much better than the past two, and I can feel and see the results of eating healthy foods instead of junk. Not surprising, but so rewarding. This week I tried a new Bean & kale Soup recipe that the hubs recommended (thanks, dear!) that was quite delicious. I’d never used kale before this recipe, but I was really impressed. It’s quite tasty and adds a lot of texture to soup. It was a little spicy but very tasty – definitely one I’ll make again.
Some other yummy meals that made their way onto my plate this week but didn’t get photographed were:
- Trader Joe’s Organic Black Bean soup
- a Pumpkin smoothie
- leftover French onion soup
- veggie burger & sweet potato fries
- English muffin pizza
Something that I’ve also been relying on lately are Luna Bars. I know pre-packaged snack bars aren’t the best snack, but sometimes I need a snack in a pinch when I’m at work. They’re 70% organic and not filled with total garbage, so I’ll take it. My favorite is the Blueberry Bliss flavor. It tastes like blueberry coffee cake!
Something that I realize I haven’t actually blogged about is my dessert. In my original goals, I wanted to try to have dessert only once a week. Well, the first two weeks that wasn’t happening because there was so much leftover candy and junk around from Christmas that just magically jumps into my mouth (bad candy!). But I sorted all that out this week and decided to get myself a special treat for real and stick to just that. This week, I hit up Trader Joe’s and got their PB & J chocolate bar. It’s new and it was only a dollar, so I figured why not? Well, it was amazing! This week, Trader Joe’s was also giving away leftover Christmas candy if you brought your own reusable bags, which I always do. So I also got to try some of their peppermint bark, but I have to say I’ve had better. :-/ Either way, it was so nice to have a satisfying treat. I will SO pick up another one of those candy bars again. I’m usually not a candy bar person, but PB&J and chocolate is just too good to pass up.
This week, even with a treat thrown in, was very “on track” for me. I didn’t feel the need to snack on stuff because, well, the snacky stuff wasn’t there. I felt satisfied by what I ate and actually followed through with an eating plan because I took the time to make one. I didn’t feel the cravings I normally do and now feel like I am the one in control again, not the other way around. And to top it all off, I even lost some of the Christmas weight. Hooray!
I realize that none of the changes I’m making are thing I haven’t done before or that others haven’t done before. What I’m doing isn’t like whoa, what an amazing diet/fitness routine you have! What it is, though, is a huge improvement of the “damage” I did over the holiday season. I am slowing “getting back to healthy.” It really is a slow process at times to realize all the mistakes I’m making and then correct them, but slow and steady is what works for me. I’m excited for almost the last week of this month’s resolution!
