I finally put my 22 pounds of apples to good use over the weekend. I made a batch of this apple butter recipe. Oh wow! It was so easy and is the best apple butter I’ve ever had. Like better than Cracker Barrel – I swear!
I peeled the apples with my apple peeler/corer/slicer. Best invention ever. Took me like 5 minutes to peel 20 apples.
Then I threw it all in the crock pot.
Let it cook for 12 hours! Which, let me tell you, was pure torture. It smelled like mulling spices ALL day and I wanted to open it so bad.
Then I threw it in the blender (and by, I, I actually mean hubby – it was a team effort!). Then it was done! Perfectly smooth tasty apple butter.
I put some on toast. I think I want to drink this stuff. It tastes so good.
For dinner the other night, I also made another new recipe that was easy and awesome. Customized breakfast bake with crescent rolls.
I basically took crescent rolls, make a little star with them, put some mostly cooked scrambled eggs, bacon, and cheese inside, wrapped it up and cooked it for about 10 minutes.
Voila! It was delicious and fast. I had the extra rolls with apple butter, which was great!
Over the weekend, we decided that it was time to move our bed from out of the corner.
Being pregnant means I have frequent bathroom trips all the time, including in the middle of the night. I usually slept on the inside of the bed in the corner, and it was starting to get really hard to scoot out of bed at 2 AM in the dark. I realized it was only going to get more awkward and probably not safe with a bigger belly on the way, so we moved the bed into the center.
It’s not very idea, as the bed takes up more of the room now, but I think being able to get out of bed, make the bed easier and have access out of both sides for when the baby comes later will be worth it.
It feels really good to be totally honest on the blog now and not have to “hide” the pregnancy any longer. It’s like a breath of fresh air! Look out for first trimester updates tomorrow, but I promise not all my posts won’t be baby related from now on. 😉
