As I was meal planning this week, I realized I am getting beyond bored with my lunch options. I tend to eat the same old thing all the time because it’s easier than branching out.
But, don’t get me wrong – I love what I’m eating. So I thought I’d share some of my favorite healthy lunch time staples as well as some new ones I’m incorporating.
1. English Muffin Pizza
I think I may have eaten this every week for like, 6 months? Bad, I know. I just love pizza, but this is a much healthier version to get my fix.
There’s a lot of different ways to do this one too. All cheese, pepperoni, sautéed veggies, or try it on a flatbread or bagel instead of a muffin. Or on a mini baguette, like I did the other day. It’s good with a salad or some veggies on the side too.
2. Ham & Apple Panini
I’m not a big fan of lunch meat sandwiches, but this panini is really does it for me. Salty ham, sweet, crunchy, and warm apples with some cheese and Dijon mustard.
I usually serve this with some tomato soup too. Yummy!
3. Breakfast Sandwich
I’m a lover of eggs – just not usually in the morning, so I love having “breakfast” sandwiches for lunch instead.
An egg, scrambled or over easy, cooked ham or turkey, and cheese on a bagel or English muffin = my perfect sandwich. I usually eat it with some fresh fruit on the side too.
Salad is easily one of my favorite lunch options if I can remember to eat it before the lettuce goes bad! Lately, my favorite salad combos are…
- Asian chicken salad: crispy wontons, mandarin oranges, grilled chicken breast, & sliced almonds
- Cranberry & walnut salad with cucumbers, carrots, & crutons
- Ham & cheese salad with ham & cheese chunks & a creamy dressing
- All veggies salad: cucumbers, carrots, bell peppers, onions, & cabbage
5. Peanut Butter & Apple Sandwich
Instead of jelly, I use thinly sliced apples and then sprinkle some cinnamon over them for a crunchy, satisfying sandwich. I also toast this sandwich, giving the peanut butter a gooey factor and then warming the apples a little.
Serve with the remaining apple or other fresh fruit.
6. A Smoothie!
I am slightly smoothie obsessed. Smoothies are not just for breakfast in my book. I consider a smoothie the perfect meal, no matter what time of day.
7. Black Bean Quesadilla
This is admittedly something that I loved so much when I first started making it that I can’t even eat it anymore. I got a little too obsessed. But it’s just that good!
All you need is:
- 1 can of black beans
- 1 can tomatoes w/green chilies
- 2 tbsp. cumin
- 2 cloves garlic
- Mexican shredded cheese
Take the black beans, tomatoes, garlic, & cumin & heat in pan until juices start to absorb. Put bean mixture on half the tortilla & sprinkle with a little cheese. Bake in the oven until tortilla is crispy. Serve with salsa & sour cream.
8. Pita Pizza
Santee bell peppers and onions in olive oil, put them in a pita bread pocket, add mozzarella cheese (microwave to melt it some), and serve with marinara sauce on the side for dipping.
You can also add steak or chicken to beef it up a bit. So fresh!
